Makes 1 loafIngredients:
- 4 x 250 ml (4 cups) self-raising flour
- 10 ml mixed dried herbs
- 1 small onion, finely chopped
- 2-3 chives, finely chopped
- 100g sun-dried tomatoes in vinaigrette well drained & finely chopped
- 125 ml (1/2 cup) grated cheddar cheese
- 1 container (500 ml) buttermilk
- extra cheese & onion rings for scattering on top
Method:
- Preheat the oven to 180'C. Grease a 29 x 11 x 7 cm loaf tin.
- In a large mixing bowl, sift together the self-raising flour & salt. Add the mixed herbs, onions, chives, tomatoes & cheddar cheese & mix well. Add the buttermilk & mix gently with a wooden spoon until just blended.
- Turn the dough into the prepared tin, spreading evenly.
- Bake uncovered for 1 hour, or until a skewer inserted comes out clean.
- Sprinkle with the extra cheese & onion rings. Switch on the grill & heat for a few seconds or until the cheese has melted.
- Remove from the oven & leave the bread to cool before turning out onto a wire rack.
- Serve with butter.
