Cheese bread with sun-dried tomatoes





So good with a braai or soup..
Makes 1 loaf

Ingredients:
  • 4 x 250 ml (4 cups) self-raising flour
  • 10 ml mixed dried herbs
  • 1 small onion, finely chopped
  • 2-3 chives, finely chopped
  • 100g sun-dried tomatoes in vinaigrette well drained & finely chopped
  • 125 ml (1/2 cup) grated cheddar cheese
  • 1 container (500 ml) buttermilk
  • extra cheese & onion rings for scattering on top
Method:
  1. Preheat the oven to 180'C.  Grease a 29 x 11 x 7 cm loaf tin.
  2. In a large mixing bowl, sift together the self-raising flour & salt.  Add the mixed herbs, onions, chives, tomatoes & cheddar cheese & mix well.  Add the buttermilk & mix gently with a wooden spoon until just blended.
  3. Turn the dough into the prepared tin, spreading evenly.
  4. Bake uncovered for 1 hour, or until a skewer inserted comes out clean.
  5. Sprinkle with the extra cheese & onion rings.  Switch on the grill & heat for a few seconds or until the cheese has melted.
  6. Remove from the oven & leave the bread to cool before turning out onto a wire rack.
  7. Serve with butter.
