Whole Nut Chocolate Cake

Can a cake/dessert be anymore decandent....

Serves: 12
Preparation: 15 minutes
Cooking Time: 45 minutes

Ingredients:

Cake:
  • 250 ml cake flour
  • 10 ml baking powder
  • 1 ml salt
  • 250 ml sugar
  • 125 ml oil
  • 4 eggs, separated
  • 125 ml cocoa powder
  • 125 ml boiling water
Sauce:
  • 285 g evaporated milk
  • 125 ml sugar
Topping:
  • 95 g evaporated milk
  • 2 slabs whole nut chocolate, broken into squares
Method:
  1.  Preheat oven to  180°C & grease a 20 x 30 cm baking dish.
  2. CAKE: sift the cake flour, baking powder & salt into a bowl. Add the sugar. In a separate bowl, whisk the oil, egg yolks, cocoa powder & boiling water. Make a hollow in the center of the dry ingredients, pour in the yolk mixture & mix.
  3. Whisk the egg whites until stiff & fold into the batter.
  4. Pour the mixture into the baking pan & bake for 40-45 minutes or until a skewer inserted in the middle comes out clean. Leave to cool slightly & prick with a fork.
  5. SAUCE: Heat the evaporated milk & sugar. Pour over the hot cake when it comes out of the oven.
  6. TOPPING: Heat the ingredients until the chocolate melts and pour over the cake. Leave to set.
