Crustless Cauliflower and Cheese Tart



Different way to serve cauliflower. 
Serves: 8
Preparation: 15 minutes
Cooking Time: 45 minutes

Ingredients
  • 450 g cauliflower florets
  • 30 ml butter
  • 1 onion, chopped
  • 1 large garlic clove, crushed
  • salt and freshly ground black pepper to taste
  • 300 g grated cheddar cheese
  • 250 g sour cream
  • 4 extra large eggs
  • 10 ml hot english mustard
  • rocket to serve
Method
  1.  Cook the cauliflower in salted water until just soft. Drain very well & set aside.
  2.   Heat the butter, fry the onion until soft and golden. Add the garlic & fry for 1 minute. 
  3.   Add the cauliflower & toss to coat with butter. Season to taste.
  4.   Spoon into a well buttered deep tart dish. Sprinkle the cheese over & toss lightly.
  5.   Beat the cultured cream, eggs and mushroom together and pour over. Bake in a preheated           oven at 180°C for 30 - 40 minutes until golden & set.
