Quick, easy & really unbelievable.....
Serves: 4Ingredients: (i would double up on this next time)...
- 1 - 2 Pieces of Chicken per person
- 60 ml (4T) low fat Mayonnaise
- 60 ml (4T) chutney
- 15 g (1/3 pkt) onion soup powder
- boiling water
Method:
- Preheat oven to 220'C.
- Remove all fat & skin from chicken, & place in oven-proof dish.
- Mix the mayonnaise, chutney & soup powder in a cup or mug.
- Add enough boiling water to fill the cup & mix well.
- Pour over the chicken.
- Cover the dish & bake the chicken for 30 minutes.
- Remove the lid & bake until browned, turning often. Add water if necessary.
Variation: Placed sliced mushrooms, chopped onion or other vegetables in the base of the dish before adding the chicken & sauce.
