Oven-Roasted Butternut and Barley Salad

Serves 4
Cooking Time 45 minutes

Ingredients:
  • 250 g Pearl Barley 
  • 1 butternut, peeled and cut into thin slices 
  • 15 ml olive or avocado oil
  • 150 g feta cubed 
  • 125 ml parsley, chopped 
For the dressing:
  • 80 ml olive or avocado oil 
  • juice of 1 lemon 
  • 1 garlic clove, crushed 
Method:
  1. Preheat oven to 180'C. Cook the barley according to packet instructions. Drain.
  2. Place the butternut on a baking tray, season & drizzle with oil. Bake for about 20 minutes or until cooked & slightly caramelized.
  3. Combine the barley, butternut, feta & parsley.
  4. For the dressing, combine all the ingredients, season, & add to salad
