Eggs with a difference.
Time: 20 minutes
Serves: 4
Ingredients:
- 3 Tbsp olive oil
- 1 onion, finely chopped
- 8 large eggs
- salt flakes
- 2 Tbsp unsalted butter
- 30g Parmesan, finely grated
- 2 Tbsp fresh lemon juice
Method:
- Heat olive oil in a large non-stick frying pan on medium.
- Add onions & saute until tender.
- Transfer to a bowl.
- In a large bowl, whisk together eggs, 1 tbsp water & 1/2 tsp salt.
- Return frying pan to medium heat & add butter.
- Add the eggs & cook, stirring constantly with a rubber spatula, until eggs are partially set.
- Turn heat to low & cover pan tightly, cooking until eggs are just set.
- Top with parmesan & cooked onions.
- At this point you can add, any other ingredients you wish eg. bacon, ham etc.
