Classic Omelette (eggs)





Eggs with a difference.


Time: 20 minutes
Serves: 4

Ingredients:
  • 3 Tbsp olive oil
  • 1 onion, finely chopped
  • 8 large eggs
  • salt flakes
  • 2 Tbsp unsalted butter
  • 30g Parmesan, finely grated
  • 2 Tbsp fresh lemon juice
Method:
  1. Heat olive oil in a large non-stick frying pan on medium.
  2. Add onions & saute until tender.
  3. Transfer to a bowl.
  4. In a large bowl, whisk together eggs, 1 tbsp water & 1/2 tsp salt.
  5. Return frying pan to medium heat & add butter.
  6. Add the eggs & cook, stirring constantly with a rubber spatula, until eggs are partially set.
  7. Turn heat to low & cover pan tightly, cooking until eggs are just set.
  8. Top with parmesan & cooked onions.
  9. At this point you can add, any other ingredients you wish eg. bacon, ham etc.
