Quick & delicious..
Enough for 6-8 people
Ingredients:
- 1 kg sweet potatoes, peeled & cubed
- 5 ml salt
- 500 ml cream
- 250 ml grated mature Cheddar Cheese
- grated fresh nutmeg
Method:
- Preheat the oven to 180'C. Place the sweet potatoes in a pot of water on the stove. Add the salt & bring to the boil. Reduce the heat & simmer until the sweet potatoes are cooked.
- Drain & transfer to an ovenproof dish.
- Grate a little fresh nutmeg over the sweet potatoes.
- Beat the cream until stiff then fold in the cheese.
- Spoon the cream mixture over the sweet potatoes & bake for 35-40 minutes, until the top is golden-brown.
- Grate some nutmeg over the top & serve at a braai or with your favourite roast.
