Mouthwatering sweet potatoes






Quick & delicious.. 


Enough for 6-8 people

Ingredients:
  • 1 kg sweet potatoes, peeled & cubed
  • 5 ml salt
  • 500 ml cream
  • 250 ml grated mature Cheddar Cheese
  • grated fresh nutmeg
Method:
  1. Preheat the oven to 180'C.  Place the sweet potatoes in a pot of water on the stove.  Add the salt & bring to the boil.  Reduce the heat & simmer until the sweet potatoes are cooked.
  2. Drain & transfer to an ovenproof dish.
  3. Grate a little fresh nutmeg over the sweet potatoes.  
  4. Beat the cream until stiff then fold in the cheese.
  5. Spoon the cream mixture over the sweet potatoes & bake for 35-40 minutes, until the top is golden-brown.
  6. Grate some nutmeg over the top & serve at a braai or with your favourite roast.
