Meringue Nests with Cheescake Filling & Berry Compote


Delicious mini nests

Serves: 6

Ingredients:
  • Meringues:
    • 4 extra large egg whites
    • 250ml castor sugar
    • 15ml cornflour
    • a pinch of salt
    • 5ml grape vinegar
  • Filling:
    • 250g LANCEWOOD Full Fat Plain Cream Cheese with Berry Sachet (@room temp
    • 125ml castor sugar
    • Juice & zest of 1 small lemon
    • 5ml vanilla essence
    • 125ml whipped cream
  • To finish:
    • Grated Milk chocolate
Method:
Meringues:
  1. Preheat the oven to 180'C.  Beat the egg whites until soft peaks are formed.  Add the castor sugar a little at a time while beating well after each addition.
  2. Sift in the cornflour & add the salt & vinegar. Mix into the beaten egg white mixture.
  3. Place baking paper on a baking sheet.  Spoon or pipe circle (the size you want) - (i did mini ones). 
  4. Using the back of a spoon, hollow each circle.  Place in the preheated oven & lower the heat to 125'C.  Bake for 1 1/2 hours.  Leave to cool in the oven.
Filling:
  1. Beat the Cream Cheese without the Berry Sachet, castor sugar, lemon juice, zest & vanilla essence together until smooth.
  2. Fold in the whipped cream.
To finish:

Spoon the filling into the meringue nests & drizzle with the berry sachet.  Sprinkle with the grated chocolate.
