Banana Bread Muffins


Perfect for lunchboxes or breakfast on the go

Time: 35 minutes + cooling
Makes: about 14

Ingredients:
  • 375 ml cake flour
  • 3 ml ground cinnamon
  • 5 ml baking powder
  • 5 ml bicarbonate of soda
  • pinch salt
  • 3 rip bananas, mashed
  • 160 ml sugar
  • 1 egg
  • 5 ml vanilla essence
  • 125 ml sunflower oil
Method:
  1. For the muffins, preheat the oven to 180'C.  Line standard muffin pans with cupcake cases. Combine the flour, cinnamon, baking powder, bicarb & salt.
  2. Mix together the banana's, sugar, egg, vanilla & oil.  Stir into the flour mixture until just combined. Divide batter between prepared cupcake cases.
  3. Bake for 20 minutes or until a testing skewer comes out clean.  Cool.
