Perfect for lunchboxes or breakfast on the go

Ingredients:
- 375 ml cake flour
- 3 ml ground cinnamon
- 5 ml baking powder
- 5 ml bicarbonate of soda
- pinch salt
- 3 rip bananas, mashed
- 160 ml sugar
- 1 egg
- 5 ml vanilla essence
- 125 ml sunflower oil
Method:
- For the muffins, preheat the oven to 180'C. Line standard muffin pans with cupcake cases. Combine the flour, cinnamon, baking powder, bicarb & salt.
- Mix together the banana's, sugar, egg, vanilla & oil. Stir into the flour mixture until just combined. Divide batter between prepared cupcake cases.
- Bake for 20 minutes or until a testing skewer comes out clean. Cool.
