Creamy Chicken with Mushroom Sauce

Serves: 2
Preparation: 10 minutes
Cooking Time: 15 minutes

Ingredients:
  • 500 g chicken breast
  • salt and freshly ground black pepper to taste
  • 15 ml oil
  • 60 ml butter
  • 1 onion, chopped
  • 250 ml Lancewood Sauce Delight Mushroom Sauce
  • Juice of half a lemon  
  • 60 ml parmesan, grated
  • 30 ml fresh parsley, chopped
Method:
  1. Cut the chicken breasts into thin slices & season with salt and pepper.  Heat the oil & 45 ml of butter together. 
  2. Fry the onion & chicken breasts until golden. Remove from the pan with a slotted spoon & set aside.
  3. Remove the foil & place the Lancewood Sauce Delight Mushroom Sauce tub in the middle of a microwavable plate, heat for 1 minute, stir & heat for another minute. 
  4. Alternatively heat the sauce in a small saucepan over medium heat. Stir regularly for approximately 3 minutes. 
  5. Remove from the heat & add to chicken & onion mixture. Add lemon juice and salt and pepper to taste.
To finish: sprinkle Parmesan and parsley over just before serving. Serve with brown rice or cooked pasta.
