Serves: 2

Cooking Time: 15 minutes
Ingredients:
- 500 g chicken breast
- salt and freshly ground black pepper to taste
- 15 ml oil
- 60 ml butter
- 1 onion, chopped
- 250 ml Lancewood Sauce Delight Mushroom Sauce
- Juice of half a lemon
- 60 ml parmesan, grated
- 30 ml fresh parsley, chopped
Method:
- Cut the chicken breasts into thin slices & season with salt and pepper. Heat the oil & 45 ml of butter together.
- Fry the onion & chicken breasts until golden. Remove from the pan with a slotted spoon & set aside.
- Remove the foil & place the Lancewood Sauce Delight Mushroom Sauce tub in the middle of a microwavable plate, heat for 1 minute, stir & heat for another minute.
- Alternatively heat the sauce in a small saucepan over medium heat. Stir regularly for approximately 3 minutes.
- Remove from the heat & add to chicken & onion mixture. Add lemon juice and salt and pepper to taste.
To finish: sprinkle Parmesan and parsley over just before serving. Serve with brown rice or cooked pasta.
