Creamy Chicken and Mushroom Bake



So easy, simple & delicious
       Serves: 4
       Preparation: 20 minutes
       Cooking Time: 30 minutes


Ingredients:
  • 60 ml  flour
  • salt and pepper to taste
  • 500 g chicken breasts, sliced
  • 80 ml butter
  • 15 ml oil
  • 1 onion, chopped
  • 500 g mixed mushroom
  • 250 g sour cream
  • 80 - 125 ml milk
  • juice of half a lemon
  • salt and pepper to taste
  • 125 ml grated Parmesan
  • freshly chopped parsley
  • if you like a bit of a bit, add some chilli, when doing the onions.
Method:
  1. Use a clean plastic bag & combine flour, salt and pepper in it.
  2. Place half the chicken in the bag and shake until coated with flour. Shake off the excess flour & set aside. Repeat with the remaining chicken.
  3. Heat the butter & oil & fry the chicken in batches until golden. Add a bit more butter if necessary.
  4. Add the chicken, sour cream, milk and lemon juice. Season to taste with salt and pepper.
To finish: Serve with grates Parmesan and a sprinkle of parsley on rice, couscous or noodles.
