Moroccan Beef Stroganoff


Always a winner... 

Serves:  4 -6

Ingredients:

600 g Beef fillet, rump or sirlion
5 ml Paprika
25 ml Harissa
Salt & freshly ground black pepper
3 Leeks, cut into thin rings
250 g Brown Mushrooms, chopped
250 g White Mushrooms, halved
olive oil for frying
500 ml Sour cream
50 ml Parsley
2 garlic cloves, finely chopped
zest of 2 lemons

Method:

1.  Cut meat into strips.  Season with salt & pepper.
2.  Fry the meat in heated olive oil, adding the meat slowly.  Add harissa & paprika.
3.  Fry the leeks & garlic separately until cooked & translucent, not brown.
4.  Fry the mushrooms until just cooked.  Mix the meat, leeks & mushrooms, & heat.
     Add the sour cream.  Heat until the mixture has thickened.
5.  Serve the warm stroganoff  on pasta, savoury rice or couscous.
