Preparation: 5 minutes
Cooking Time: 10-15 minutes
Ingredients:
- 3 garlic cloves, chopped
- 1 red onion, chopped
- 2 rosemary sprigs
- 400 g mixed mushrooms, chopped
- 4 chicken breast fillets, cubed
- 250 ml cream
- 200 g baby spinach (I served separately)
Method:
- Saute 3 cloves of chopped garlic, 1 chopped red onion & 2 sprigs of rosemary for 5 minutes.
- Add 400 g chopped mixed mushroom, 4 cubed chicken breast fillets and cream.
- Poach for 10 - 15 minutes and serve with wilted baby spinach.
- Season according to taste
