Creamy Chicken & Mushroom with Baby Spinach



Preparation:  5 minutes
Cooking Time: 10-15 minutes

Ingredients:
  • 3 garlic cloves, chopped
  • 1 red onion, chopped
  • 2 rosemary sprigs
  • 400 g mixed mushrooms, chopped
  • 4 chicken breast fillets, cubed
  • 250 ml cream
  • 200 g baby spinach (I served separately) 

Method:
  1. Saute 3 cloves of chopped garlic, 1 chopped red onion & 2 sprigs of rosemary for 5 minutes.
  2. Add 400 g chopped mixed mushroom, 4 cubed chicken breast fillets and cream.
  3. Poach for 10 - 15 minutes and serve with wilted baby spinach.
  4. Season according to taste
