A beautiful Indian Curry dish.....
Serves: 4
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
- 30 ml oil
- 15 ml cumin, garam masala, turmeric & mustard seeds
- 1 onion, thinly sliced
- 1 red pepper, seeded & chopped
- 5 ml each finely chopped garlic & ginger
- 1 or 2 chilli's, chopped
- 4 chicken breasts, cubed
- 1 tin chopped tomatoes
- Basmati rice & fresh coriander, to serve
Method:
- Heat oil in a large saucepan. Add the spices & fry for 30 seconds or until fragrant,
- Add the onion & red pepper & saute for four to five minutes or until the onion is soft, Add the garlic, ginger & chilli & fry for another two minutes.
- Add the chicken & tomato & stir well, lower the heat, cover & simmer for 7 to 10 minutes or until chicken is cooked. Season to taste & serve with basmati rice & fresh coriander,
