Cheese Muffins


Savoury scones, also good....

Serves: 36 muffins
Prep Time: 15 minutes
Cooking Time: 20 minutes

Ingredients:
  • 250 ml sunflower oil
  • 4 free-range eggs
  • 250 ml buttermilk or plain yogurt
  • 100 g sugar
  • 560 g self-raising flour
  • 1 t salt
  • 200 g Cheddar cheese, grated
Method:
  1.  Heat the oven to 180°C.
  2. Beat the oil, eggs, buttermilk or yogurt and sugar* together
  3. Using a wooden spoon fold in the flour, salt & cheese. Do not over-mix.
  4. Spoon into well greased muffin trays and bake for 20 minutes or until golden brown.
*Omit the sugar if you prefer a completely savory taste. It wont affect the recipe
