Bilini's with Smoked Salmon & Cream Cheese






Absolute decadence

Ingredients:

  • 1/4 cup Buckwheat flour
  • 1 cup Flour
  • 1/2 tsp baking powder
  • 200 ml milk
  • 1 egg
  • 2 T melted butter
  • 250 ml cream cheese
  • 2 T finely chopped chives
  • Salt & freshly ground black pepper
  • 250 g smoked salmon ribbons
  • 3 T black caviar
  • Lemon Wedges to serve


Method:

  1. Combine both flours, baking powder & a pinch of salt in a bowl.
  2. In a separate bowl, whisk together the milk, egg & butter, & then whisk into the flour mixture.
  3. Heat a nonstick pan over a medium heat & fry tablespoons of batter for about 2 minutes until bubbles form on the top side of the blini. 
  4. Flip & cook for a further minute or until golden brown.  Repeat with the remaining batter. Set aside.
  5. Beat together the cream cheese & chives, & season with salt & pepper.
To Serve:   Top each blini with the chive cream cheese & a piece of smoked salmon.  Finish with a small dollop of caviar & a sprig of dill, & serve with lemon wedges.
