Rice with a difference...
Time: 40 minutes
Makes: 12
Ingredients:
- 2 cups (500 ml) cooked basmati rice, cooled
- 2 smoked chicken breasts, diced
- 2 handfuls cherry tomatoes, halved
- 1½ cups (375 ml) Mozzarella cheese, grated + extra
- 1 cup (250 ml) peas
- 2 handfuls mixed herbs ( like,basil, parsley and thyme), chopped
- 4 eggs, beaten
- salt and ground pepper
Method:
- Preheat the oven to 200°C. Cut 12 x 14 cm squares out of baking paper and use this to line a large 12 hole muffin tray.
- Mix the rice, chicken, tomatoes, cheese, peas, herbs and eggs together. Season and spoon into prepared trays. Sprinkle extra cheese on top and bake for 15 - 20 minutes or until cakes are firm to the touch and light golden.
- Stand in pan for 5 minutes. Turn out onto a wire rack to cool completely.
