Savoury Rice Cakes


Rice with a difference... 

Time: 40 minutes
Makes: 12

Ingredients:

  • 2 cups (500 ml) cooked basmati rice, cooled
  • 2 smoked chicken breasts, diced
  • 2 handfuls cherry tomatoes, halved
  • 1½ cups (375 ml) Mozzarella cheese, grated + extra
  • 1 cup (250 ml) peas
  • 2 handfuls mixed herbs ( like,basil, parsley and thyme), chopped
  • 4 eggs, beaten
  • salt and ground pepper
Method:
  1. Preheat the oven to 200°C. Cut 12 x 14 cm squares out of baking paper and use this to line a large 12 hole muffin tray.
  2. Mix the rice, chicken, tomatoes, cheese, peas, herbs and eggs together. Season and spoon into prepared trays. Sprinkle extra cheese on top and bake for 15 - 20 minutes or until cakes are firm to the touch and light golden.
  3. Stand in pan for 5 minutes. Turn out onto a wire rack to cool completely.
