A deliciously sweet and savory salad with
loads of texture and crunch..
Prep Time: 10 minutes
Cook Time: 1 hour
Serves: 6
Ingredients:
- 2 butternuts, peeled and cubed
- 45 ml olive oil
- 30 ml cumin seeds
- salt and freshly ground black pepper
- 1 bunch watercress
- 200 g Feta cheese, cubed
- 120 g (200 ml) toasted pumpkin seeds
- Preheat the oven to 200°C. Spread the butternut cubes out on an baking tray. Pour over olive oil & add cumin seeds and season well with salt and pepper. Give it a toss to coat.
- Bake for 1 hour or until the tips are lightly caramelized, Remove from the oven and allow too cool to room temperature.
- Place the cooled butternut in a bowl with the watercress, Feta cheese and pumpkin seeds. Mix gently and serve immediately.
