Make-Ahead Breakfast Enchiladas

These Make-Ahead Breakfast Enchiladas are perfect if you are planning
for a late night. Easy to prepare and you have the easy and guaranteed freshly made breakfast for
the next morning!

Cook Time: 45min
Serves: 4-6

Ingredients:

  • 2 Cups Deli Ham, Chopped into Small Pieces
  • 1/2 Cup Green Onions, Diced 
  • 2 1/2 Cups Cheddar Cheese, Grated
  • 10 Large Flour Tortillas
  • 150ml Full Cream Milk + 150ml Cream (Mixed)
  • 4 Large Eggs
  • 1/2 tsp Salt
  • 1 tbsp Flour
  • Salsa, Sour Cream and Extra Green Onions for Serving
Method:

Coat a 9x13 inch baking dish with nonstick cooking spray.

Mix together the ham, green onions and 2 cups of grated cheddar in a medium sized bowl.
Scoop 1/3 cup of the cheese mixture into each tortilla. 
Roll up the tortillas and place them, seam down, into the baking dish.

Whisk together the Milk-and-Cream mixture, eggs, salt and flour. 
Pour the liquid over the tortillas.
Cover the baking dish with Tin Foil and refrigerate overnight.

In the morning, preheat the oven to 180°C.
Bake, covered, for 35min. 
Remove Foil and sprinkle the remaining 1/2 cup of grated cheddar over the enchiladas.
Bake for another 10min or until the tops are golden  brown and the egg mixture is set.

Serve with Salsa, Sour Cream and some extra Green Onions.
