Caramelised Onion and Thyme Tarts. Easy, tasty and beautiful.
A perfect little appetizer.
Serves: 4
Preparation time: 10 Minutes
Cooking time: 20 Minutes
Ingredients:
- 3 tbsp (45ml) Olive or Avocado oil
- 4 Large onions, thinly sliced
- 2 tbsp (30ml) Sugar
- 1 tbsp (15ml) fresh Thyme leaves + extra
- Salt and ground black Pepper
- 2 sheets frozen ready-rolled Puff pastry, thawed
- 1 Egg, beaten
- 100g Blue cheese, optional ( I used Camembert)
Method:
- Preheat the oven to 200°C and line a baking tray with baking paper.
- Heat the oil in a large non-stick frying pan over high heat.
Add the onions, sugar and thyme and cook, stirring for 3 minutes or until soft.
Season, reduce heat to medium-high, and cook, stirring for 3-4 minutes or until caramelised. Set aside - Meanwhile, cut 8 squares from the pastry sheets and place on the lined baking tray.
- Score the edges of the pastry with a sharp knife to create a border.
Prick the inside of the pastry with a fork and brush with egg.
Bake for 6-8 minutes or until golden brown and slightly puffed. - Place 2-3 tbsp (30-45ml) of the onion mixture into each tart.
Top with some blue cheese and fresh thyme leaves.
