Crêpes Suzette Cake

Simple but delicious no-bake cake

Serves: 6-8
Cooking time: 30 minutes

Ingredients:
  • 250ml (1 cup) Orange juice
  • 60ml (4 tbsp) Brown sugar
  • 1/2 Vanilla pod seeds
  • 1 (300g) thinly sliced Orange 
  • 50g Salted butter
  • 30ml (2 tbsp) fresh Cream
  • 250g Mascarpone
  • 250g Ready-made custard
  • 75g Castor sugar
  • 250ml (1 cup) freshly whipped Cream
  • 15 Pancakes
  • 30ml (2 tbsp) toasted flaked Almonds
  • Mint leaves

Method:
  1. Bring 250ml orange juice, 60ml brown sugar and the seeds of 1/2 vanilla pod to a simmer over a medium heat.
  2. Add the 1 thinly sliced orange and simmer, 5 minutes.
  3. Remove the oranges and set aside until needed.
  4. Whisk 50g salted butter and 30ml fresh cream. Simmer, 3 minutes, and set aside.
  5. Fold 250g mascarpone (at room temperature), 250g ready-made custard and 75g castor sugar together gently until smooth.
  6. Fold in 250ml (1 cup) freshly whipped cream.
  7. Stack 15 store-bought pancakes on top of each other with a tablespoonful of the mascarpone filling between each layer.
    Arrange the cooked orange slices op top.
    Drizzle the sauce over the cake, and garnish with 30ml toasted flaked almonds and a few mint leaves, if desired.

** Tips**
The mascarpone filling can be made up to a day in advance and refrigerated until needed - perfect for easy entertaining.
