Braised Lamb Shanks

Another lamb favourite




Ingredients:
  • 2 Lamb shanks (trimmed, ask your butcher)
  • a little Flour
  • Salt & Pepper
  • 250ml chopped Tomatoes (I used tinned)
  • a sprig of Rosemary
  • a sprig of Thyme
  • 125ml Red wine
  • 1 tsp Sugar
  • 4 Cloves garlic
  • Zest and juice of a lemon
  • 1/2 a chili, finely chopped
  • PS - I also added about 1/2 tsp dried rosemary and dried coriander and it does add more flavour.

Method:
  1. Dust the shanks with flour and brown in a hot skillet.
  2. Place in oven dish (with lid) with all other ingredients.
  3. Braise for 1 1/2 - 2 hours until meat is very soft.
  4. Take out the oven and serve on polenta, rice or pasta.
