All time classic
Serves: 6-8
Ingredients:
- 30g Butter / Margarine
- 1 large Onion, chopped
- 2 Cloves garlic, crushed
- 30ml Curry powder
- 10ml Turmeric
- 60ml Lemon juice
- 1kg Mince
- 1 thick slide White bread, soaked in a little milk
- 45ml Apricot jam / chutney
- 125ml Raisons
- 1 Cooking apple, peeled & grated
- 1 ripe Banana
- 100ml Beef stock, or dry white wine
- Salt & Pepper
- 5ml Gravy browning
- 6 Lemon or bay leaves
Ingredients (Custard):
- 3 Eggs
- 250ml Milk (fresh milk added to milk drained from bread)
Method:
- Place butter in a large shallow dish. Micro on high for 1 minute.
- Add onion & garlic - micro on high 3-4 minutes.
- Mix together curry powder, turmeric & lemon juice, add to onion mixture & blend well.
- Add the mince & mix with fork. Micro, covered, high (5 minutes).
Stirring once or twice. - Drain milk from bread, set aside to use in custard.
- Mash soaked bread with fork & add to meat mixture.
- Add apricot jam, raisons, apple & banana, stock, seasoning & gravy browning.
- Mix well, cover & micro on 70% for 10 minutes, stirring once.
- Smooth mixture, raising slightly in centre so that egg custard is poured over most of it & will settle around edge. Micro, uncovered on 50% for 20-25 minutes or until custard is set.
