Meatballs in Thai Green Curry Sauce

Serves: 4
Preparation time: 20 Minutes
Cooking time: 15 Minutes



Ingredients:
  • 2 T Sunflower oil
  • 500g Chicken, beef or pork mince
  • 1 Onion, grated
  • 1 x 5cm piece of ginger, grated
  • 80g Woolworths Thai green curry paste
  • 4 lime or curry leaves
  • 1 x 400ml can Coconut milk
  • Toasted almonds, to garnish
  • Poppadums, to serve


Method:
  1. Heat the oil in a pan.
  2. Place the beef/ chicken or pork mince in a mixing bowl with the onion and ginger.
  3. Mix, then roll into small balls. Brown the meatballs in the pan.
  4. Fry the Thai green curry paste in another pan, over a medium heat for 1 minute.
  5. Add the lime or curry leaves and coconut milk.
  6. Simmer for 2 minutes, add the meatballs and cook for a further 5 minutes.
  7. Sprinkle with toasted flaked almonds and serve with poppadums.
