Baked Breakfast Omelette

One dish.. breakfast

Serves: 4
Preparation time: 15 Minutes
Cooking time: 25 Minutes


Ingredients:
  • Oil, for greasing
  • 250g Dry-cured streaky bacon
  • 4 Smoked sausages, cut into chunks
  • 200g Baby tomatoes
  • 5 Free-range eggs
  • Sea salt and freshly ground
  • Black pepper
  • Basil leaves, for sprinkling
  • Sliced bread


Method:
  1. Preheat the oven to 200°C.
  2. Grease 1 large baking pan or 4 smaller ones.
  3. Roll up the bacon rashes and place in the pan.
  4. Bake for 10 minutes. 
  5. Add the sausage and bake for a further 5 minutes. Add the tomatoes.
  6. Whisk the eggs until fluffy.
  7. Pour into the pan and reduce the heat to 160°C.
  8. Bake for 8 to 12 minutes, or until the egg is pale golden and just set.
  9. Add a little black pepper and sprinkle with basil leaves. Season to taste with salt at the table.
  10. Trim the crusts off the bread and cut into triangles.
  11. Place on a baking sheet and toast at 200°C for 15 minutes, or until crisp and golden.
    Serve with omelette.
