Three-Bean Salad, Rebooted

Ingredients:
  • 1 T Red wine vinegar
  • 2 t Parsley, finely chopped
  • 2 t Extra virgin olive oil
  • Salt & Pepper
  • 1 x 400g Can red kidney beans
  • 1 x 400g Can borlotti beans
  • 1 x 400g Can butter beans
  • 1 x 400g Can cannellini beans
  • 250g Mozarella cheese
  • Red onion, thinly sliced

Method:
  1. Whisk together, 1 T red wine vinegar, 2 t finely chopped parsley, 2 t extra virgin olive oil, salt & pepper.
  2. Drain and rinse 1 x 400g can red kidney beans, 1 x 400g can borlotti beans, 1 x 400g can butter beans and 1 x 400g can cannellini beans, then add the the vinaigrette. 
  3. Add 250g torn fresh mozarella. 
  4. Marinate for 10 minutes. 
  5. Combine 1 thinly sliced red onion, 1 1/2 T red wine vinegar and marinate for 10 minutes.
  6. Mix with the beans, season to taste and top with fresh mint.
