Delicious
Ingredients:
- 1 T Red wine vinegar
- 2 t Parsley, finely chopped
- 2 t Extra virgin olive oil
- Salt & Pepper
- 1 x 400g Can red kidney beans
- 1 x 400g Can borlotti beans
- 1 x 400g Can butter beans
- 1 x 400g Can cannellini beans
- 250g Mozarella cheese
- Red onion, thinly sliced
Method:
- Whisk together, 1 T red wine vinegar, 2 t finely chopped parsley, 2 t extra virgin olive oil, salt & pepper.
- Drain and rinse 1 x 400g can red kidney beans, 1 x 400g can borlotti beans, 1 x 400g can butter beans and 1 x 400g can cannellini beans, then add the the vinaigrette.
- Add 250g torn fresh mozarella.
- Marinate for 10 minutes.
- Combine 1 thinly sliced red onion, 1 1/2 T red wine vinegar and marinate for 10 minutes.
- Mix with the beans, season to taste and top with fresh mint.
