Wholesome goodness.
Chicken, and this one is filled with even more of the good stuff!
Serves: 8
Takes: 1 hr 30 minutes
Ingredients:
- 15ml Olive or avocado oil + extra for rubbing
- 1 Red onion, chopped
- 2 Celery stalks, finely chopped
- 1 Garlic clove, crushed
- 100g Almonds, chopped
- 250ml Wholewheat couscous, cooked
- Small handful thyme leaves
- Small handful rosemary leaves, chopped
- Pinch cayenne pepper
- Zest of 1 lime
- Salt and pepper
- 1 Whole chicken
Method:
- Fry the onion, celery and garlic on medium until soft. Remove from the stove then mix in the rest of the ingredients (except the chicken).
- Preheat oven to 190°C. Spoon the stuffing into the chicken, tie the legs together with kitchen string and rub with oil. Season to taste with salt and pepper.
- Place the chicken, breast-side up, on a roasting tray. Bake for about an hour, basting with oil after 30 min. The chicken is done when the juices run clear.
**Tips for a healthy meal**
* Use wholewheat couscous - it has only 1g of total fat and 0g of saturated fat and cholesterol per 55g.
* Almonds have a favourable effect on blood-cholesterol levels and help build strong bones and teeth.
