Iced Coffee Lollies

You need to try this!



Preparation time: 30 Minutes, plus freezing time
Makes: about 20

Ingredients:
  • 60ml Instant coffee granules
  • 400ml Boiling water
  • 500ml Cream
  • 380g Can sweetened condensed milk

Method:
  1. Spoon the coffee granules into a measuring jug and add the boiling water.
    Stir to dissolve.
    Set aside to cool completely. 
  2. Whip the cream until stiff.
    Fold in the condensed milk.
  3. Divide the mixture into 3 or 4 jugs.
    Add a different amount of prepared cold coffee to each jug so they are all a different shade of brown.
  4. Divide one of the coffee mixtures between the lolly moulds.
    Freeze the moulds until firm.
    Use the next coffee mixture to add another layer. Freeze.
    Remove from the freezer and press a wooden lolly stick into the firm layers.
    Add another layer of coffee mixture.
    Return to the freezer. Repeat until all the layers have been added. Freeze overnight.
  5. When ready to serve, dip the moulds very briefly into warm water to loosen the lollies.
  6. For easier lollies, mix all the coffee into the cream mixture and make lollies of a single colour. Once they start to freeze, press a lolly stick into each one.
