Cheesecake Brownie Cupcakes

The Cream of Cheese.



Makes 24

Brownie Layer
Ingredients:
  • 250ml Oil
  • 500ml Sugar - i would use castor sugar, next time
  • 4 Large eggs
  • 10ml Vanilla essence
  • 250ml Cake flour
  • 160ml Cocoa powder, plus extra to dust
  • 2ml Baking powder
  • 2ml Salt

Cheesecake Layer
Ingredients:
  • 1 x 230g Tub Lancewood low fat cream cheese
  • 2 Large eggs
  • 250ml Sugar

Method:
  1. Combine the oil and sugar, and beat well.
  2. Add the eggs and vanilla, and mix until combined.
  3. Sift together the flour, cocoa powder, baking powder and salt.
  4. Little by little, whisk the flour mixture and set aside.
  5. Beat the cream cheese, eggs an sugar together until combined.
  6. Line two muffin tins with muffin cases. Spoon the brownie mixture into the cases, followed by the cheesecake mixture on top.
  7. Bake in a preheated oven at 180'C for 20 minutes. Leave to cool.
  8. Dust with cocoa powder before serving. 

Tips:
* Use this recipe to make the cake layer for chocolate trifle.
* Add crushed walnuts for a crunchier option.
* Serve with fresh raspberries and cream or ice cream.
