The Cream of Cheese.
Makes 24
Brownie Layer
Ingredients:
- 250ml Oil
- 500ml Sugar - i would use castor sugar, next time
- 4 Large eggs
- 10ml Vanilla essence
- 250ml Cake flour
- 160ml Cocoa powder, plus extra to dust
- 2ml Baking powder
- 2ml Salt
Cheesecake Layer
Ingredients:
- 1 x 230g Tub Lancewood low fat cream cheese
- 2 Large eggs
- 250ml Sugar
Method:
- Combine the oil and sugar, and beat well.
- Add the eggs and vanilla, and mix until combined.
- Sift together the flour, cocoa powder, baking powder and salt.
- Little by little, whisk the flour mixture and set aside.
- Beat the cream cheese, eggs an sugar together until combined.
- Line two muffin tins with muffin cases. Spoon the brownie mixture into the cases, followed by the cheesecake mixture on top.
- Bake in a preheated oven at 180'C for 20 minutes. Leave to cool.
- Dust with cocoa powder before serving.
Tips:
* Use this recipe to make the cake layer for chocolate trifle.
* Add crushed walnuts for a crunchier option.
* Serve with fresh raspberries and cream or ice cream.
