This is really easy and simple to make and served with sour cream and Avo - it is delish!

Ingredients:
- 30 ml olive oil
- 1 bunch spring onions, chopped
- 1 clove garlic, finely chopped ( i did 2)
- 1 green jalapeno chilli, finely chopped ( i added 2 - for abit of zing)
- 5 ml each coriander, cumin & paprika
- 500g pork mince
- 90 ml fresh coriander, chopped
- 2 plum tomatoes, thinly sliced
- 750g grated cheese (mozzarella & white cheddar)
- 6 medium tortillas
- guacamole & sour cream to serve
Method:
- Heat 15m Oil in a frying pan & saute the spring onions, garlic, chilli, spices & mince together until golden brown, breaking up the meat continually with a spatula until crumbly. Season to taste with salt and pepper. Stir in the coriander.
- Place the tortillas on a work surface and spread a little of the mince mixture onto one half of each, top with the tomatoes( I omitted this), and sprinkle with cheese. Fold the tortillas into a half-moon shape.
- Heat the remaining oil ( I used butter) & fry the folded tortillas, one at a time, until golden brown on both sides. Use two spatulas to help you turn them over. Serve with Guacamole & Sour cream
