Chicken Sausage and Vine Tomato Tray Bake

Super Sizzler.

Simply grill in the oven or pan-fry, then serve with salad or roast vegetables for a meal that's sure to satisfy.


This recipe serves 4.

Method:
  1. Place 150g (i used 350g - who doesn't like potatoes) halved baby potatoes on a large baking tray, drizzle with 1-2 T Olive Oil, toss with sea salt and bake in an oven preheated to 200ÂșC for 20 minutes.
  2. Remove from the oven and toss, then add the chicken sausages and a few vine tomatoes and cook for a further 15-20 minute, or until the sausages are cooked through. 
  3. Serve on the tray and dot with basil pesto and fresh basil leaves.

Tips:

** Give both the regular chicken sausages and those studded with fresh spinach and chunks of creamy feta a try.
