Ingredients:
4 x 250ml (4 cups) self-raising flour
Big Pinch of Salt
10ml (2t) mixed dried herbs
1 small onion, finely chopped
2-3 chives, finely chopped
100g sun-dried tomatoes in vinaigrette, well drained & finely chopped
125ml (1/2 cup) grated Cheddar cheese
1 container (500ml) buttermilk
extra cheese & onion rings for scattering on top
Method:
- Preheat the oven to 180'C. Grease a 29x11x7cm loaf tin with butter.
- In a large mixing bowl sift together the self-raising flour & salt.
- Add the mixed herbs, onion, chives, tomatoes & cheese & mix well.
- Add the buttermilk & mix gently with a wooden spoon until just blended.
- Turn the dough into the prepared tin, spreading evenly.
- Bake uncovered for 1 hour or until skewer comes out clean.
- Makes 1 loaf ( I made 2 x smaller loaves)
