Mushroom soup

Ingredients:
  • 1 Red onion
  • 5 Garlic cloves, chopped
  • 5 g fresh thyme
  • 2 T olive oil
  • 800 g mushrooms
  • 2 cups Chicken stock
  • Mascarpone, for serving
  • Woolworths coriander-and-lime pesto, for serving
  • Radish, grated, for serving
Method:
  1. Soften 1 chopped red onion, 5 chopped garlic cloves and 5 g fresh thyme in 2 T olive oil.
  2. Add 800 g chopped mushrooms and cook for 5 minutes.
  3. Stir in 2 cups good-quality chicken stock and season.
  4. Simmer for 5 minutes, then blend.
  5. Serve with dollops of mascarpone, Woolworths' coriander-and-lime pesto and grated radish.
