Ingredients:
- 1 Red onion
- 5 Garlic cloves, chopped
- 5 g fresh thyme
- 2 T olive oil
- 800 g mushrooms
- 2 cups Chicken stock
- Mascarpone, for serving
- Woolworths coriander-and-lime pesto, for serving
- Radish, grated, for serving
- Soften 1 chopped red onion, 5 chopped garlic cloves and 5 g fresh thyme in 2 T olive oil.
- Add 800 g chopped mushrooms and cook for 5 minutes.
- Stir in 2 cups good-quality chicken stock and season.
- Simmer for 5 minutes, then blend.
- Serve with dollops of mascarpone, Woolworths' coriander-and-lime pesto and grated radish.
