Rosa Tomato, Basil and Parmesan Quiches

If you love the taste of Rosa Tomatoes and Basil, this is
absolutely tasty, quick and easy!
Preparation Time: 30min
Cooking Time: 30min
Serves: 6

** Preheat oven to 180°C

Ingredients:

Pastry:

  • 1 Quantity of Shortcrust pastry
Filling:
  • 250ml Milk or Cream
  • 15ml Lemon Juice
  • 3 Large Eggs
  • 30g Fresh Basil, Shredded
  • 1 Punnet Rosa Tomatoes
  • 100g Parmesan Cheese
Method:

Pastry:
Roll out pasty and use it to line mini quiche tins.
Bake them blind for 10min.

Filling:
Whisk the milk, lemon juice and eggs in a jug.
Divide the shredded basil and rosa tomatoes evenly among the pastry cases.
Divide the milk mixture evenly among the quiche cases, top each one with parmesan cheese and season to taste.
Bake them in the preheated oven for 30min or until set and golden.
Garnish with extra basil leaves if you prefer.
