Camembert Parcel


Small dinner treat.

Makes: 1 parcel
Preparation: 15 minutes
Baking time: 25 minutes

Ingredients:
  • 1 x 150g Camembert cheese
  • 45ml basil pesto
  • 80ml baby spinach, blanched
  • About 200g button mushrooms, fried
  • About 6 short spring onions
  • 1 Feta round, coarsely crumbled
  • 4 Sheets phyllo dough
  • About 30ml butter, melted

Method:
  1. Slice the Camembert horizontally into three.
    Spread pesto on the bottom and middle slice and spoon the spinach, mushrooms, spring onions and feta on top.
    Stack the slices on top of each other like three-layer cake.
  2. Brush each phyllo sheet with butter and stack them on top of each other.
    Put the cheese stack in the centre and fold the dough over to form a parcel; crumple the ends over each other.
    Brush with the remaining butter and place the parcel on a baking tray lined with baking paper. Bake in a preheated oven at 200°C for about 15-20 minutes or until the pastry is golden brown and crispy. Serve hot.
