Mexican Baked Eggs



I decided to try something different this morning, and this is the result.
Not difficult to make and takes about 30 minutes, Serves 4.

Ingredients:

  • 30 ml olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 410 g tin baked beans
  • 400 g tub Mexican tomato mix
  • 6 eggs (i used 4)
  • handful coriander, chopped
  • flat bread to serve, (I used leftover roti's)
Method:
  1. Preheat over to 200'C
  2. Heat oil in a large ovenproof pan on medium-high.  Saute onion & garlic
  3. Add beans & tomato mix & bring to the boil.  Lower heat & simmer for about 10 minutes or until slightly reduced.  Season
  4. Use a spoon to form 6 small holes in the mixture & break an egg into each hole.  Season
  5. Bake for 10 - 15 minutes or until eggs are set
  6. Serve with coriander, bread & i also added a bit of plain yoghurt to the mix.
