I decided to try something different this morning, and this is the result.
Not difficult to make and takes about 30 minutes, Serves 4.
Ingredients:
- 30 ml olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 410 g tin baked beans
- 400 g tub Mexican tomato mix
- 6 eggs (i used 4)
- handful coriander, chopped
- flat bread to serve, (I used leftover roti's)
Method:
- Preheat over to 200'C
- Heat oil in a large ovenproof pan on medium-high. Saute onion & garlic
- Add beans & tomato mix & bring to the boil. Lower heat & simmer for about 10 minutes or until slightly reduced. Season
- Use a spoon to form 6 small holes in the mixture & break an egg into each hole. Season
- Bake for 10 - 15 minutes or until eggs are set
- Serve with coriander, bread & i also added a bit of plain yoghurt to the mix.
