Garlic Chilli Prawns with Zesty Lemon Mayonnaise

I don't normally do seafood, but decided to give this a try.  Really tasty, and so quick to make.

Ingredients:

  • Juice of half a lemon
  • Zest of 1 lemon
  • 4 Tbsp's Mayonnaise
  • 125g Margarine
  • 2 tsps Garlic Flakes
  • 1 tsp Crushed Chillies
  • Squeeze of Lemon Juice
  • 24 Prawns
Method:
  1. To make the mayonnaise, combine the lemon juice, lemon zest & mayonnaise.  Chill until ready to serve.
  2. Melt the margarine & add the Garlic Flakes, Crushed Chilli's & a good squeeze of lemon juice.
  3. Butterfly the prawns & clean.
  4. Place on a baking tray, shell side down & brush with the margarine.
  5. Grill under just cooked through & serve with toasted baquette rounds with lemon mayonnaise.
I served this with a green salad, very light served on a hot summers day.
