I don't normally do seafood, but decided to give this a try. Really tasty, and so quick to make.

- Juice of half a lemon
- Zest of 1 lemon
- 4 Tbsp's Mayonnaise
- 125g Margarine
- 2 tsps Garlic Flakes
- 1 tsp Crushed Chillies
- Squeeze of Lemon Juice
- 24 Prawns
Method:
- To make the mayonnaise, combine the lemon juice, lemon zest & mayonnaise. Chill until ready to serve.
- Melt the margarine & add the Garlic Flakes, Crushed Chilli's & a good squeeze of lemon juice.
- Butterfly the prawns & clean.
- Place on a baking tray, shell side down & brush with the margarine.
- Grill under just cooked through & serve with toasted baquette rounds with lemon mayonnaise.
I served this with a green salad, very light served on a hot summers day.
