This is a sweet treat that isn't too sweet. Perfect to end off a meal.
And the best part of all is it looks simple and tastes divine.
This recipe serves about 12,
Preparation time is about 15 minutes
1 Hour Cooling/ Setting time for Jelly
2-3 Hours for Setting for Pudding
Ingredients:
- 2 x Tins Crushed Pineapple
- 20ml White Sugar
- 2 1/2 x Packets of Pineapple Jelly
- 500ml Iced water
- 1 x Tin of Chilled Ideal Milk
Method:
- Separate the crushed pineapple from the juice using a colander.
- Heat 500ml pineapple juice and the sugar in a saucepan on the stove on medium heat.
- Add the dry jelly crystals into a large bowl and slowly mixing in the hot pineapple juice allowing it to melt the crystals.
- Stir the iced water into the juice-jelly mixture. Set in fridge until almost firm. (For about 1 hour)
- Whip the ice cold ideal milk in a large mixing bowl until it is thick and super frothy.
- Stir together the frothy ideal milk and juice-jelly with a wooden spoon or spatula.
- Stir in the well drained crushed pineapple.
- Spoon into individual glasses/ dessert bowls.
- Place onto a tray and allow to set in the fridge for about 2-3 hours in the fridge.
Tips:
** Placing the 500ml water and tin of ideal milk in the fridge the night before allows for easy preparation on the day.
** Make sure to use a wooden spoon or spatula for step 6.
** Leave the crushed pineapple in the colander so that it will drain thoroughly before you will need it.

Simplistic and delicious, yet another yay from the guinea pigs.
My husband is not a huge fan of pineapple, but really enjoyed the flavours of the pudding as it is extremely subtle and not too sweet.
